It consists of several layers and is covered in double mirror glaze to give it a special wow effect. This passion fruit and mango mousse is so spectacular and is of the best desserts I have ever made. \r<br>\r<br>Ingredients :\r<br>Almond sponge cake layer (18 cm ring)\r<br>2 eggs\r<br>125 gr of unsalted butter\r<br>125 gr caster sugar\r<br>125 gr plain white flour \r<br>1/2 tbsp baking powder \r<br>1 tbsp vanilla extr\r<br>1 tsp of almond extr \r<br>\r<br>Mango jelly layer (18 cm ring)\r<br>300 gr mango puree ( puree your mangoes) \r<br>50 gr of sugar\r<br>10 gr OR 1tbsp of gelatine + 4 tbsp of cold water \r<br>\r<br>Passion Fruit Mousse (20 cm ring)\r<br>200 gr strained passion fruit \r<br>120 gr caster sugar\r<br>3 sheets leaf gelatine\r<br>4 tbsp water\r<br>2 egg whites\r<br>1 tsp lemon juice\r<br>450 ml double cream, lightly whipped\r<br>\r<br>Mango Mousse layer - (18 cm ring)\r<br>\r<br>300 mango puree (about 1,5 medium sized mangoes)\r<br>Juice 2 limes \r<br>250ml double cream\r<br>100 icing sugar\r<br>3 leaves gelatine\r<br>\r<br>Mirror Glaze :\r<br>150 gr glucose syrup\r<br>150 gr granulated sugar\r<br>75 gr Water\r<br>10-12 gr gelatin\r<br>75 gr Water for gelatin\r<br>100 gr condensed milk\r<br>150 gr white chocolate\r<br>Food colouring of your choice ( yellow and pink)\r<br>1 tsp of titanium dioxide ( optional)
